Delicious, Quick and Easy Chocolate Truffles

How to impress your dinner guest hosts? Take some delicious homemade chocolate truffles for after their delicious dinner. You won’t need many as they’re very rich but they are guaranteed to impress!

Ingredients for 25 truffles

  • 200g 70% dark chocolate
  • 175ml double cream
  • flavours such as Cointreau, Amaretto, Baileys, orange juice,
  • coatings such as chopped nuts, crumbled flakes, melted white chocolate, cocoa powder

Heat the cream in a non stick pan over a medium heat.

Break the chocolate into small pieces and place in a large bowl.

When the cream begins to boil, pour it over the chocolate and stir until all the chocolate is melted. Continue mixing until smooth and shiny.

Divide between smaller bowls and add your flavourings a little at a time. Make sure you taste after each addition until the desired strength of flavour is achieved.

Leave uncovered to cool for an hour to 90 minutes until set.

Prepare your coatings into small bowls.

If the ganache you’ve prepared is not hard enough, place it in the fridge for 20 minutes.

Take a teaspoon size piece of ganache, roll it into a ball and then roll in your coating. If using melted chocolate, place the truffle on a fork and spoon over the melted chocolate.

Place the truffles, when coated, on a cling-film covered tray.

Put in the fridge until needed, overnight is really good.

To make mine look presentable for a dinner party, I used an egg carton, some cellophane and a pretty coloured paper and filled each hole with 2 truffles.

They didn’t last long!!

These will of course now be available on the yacht after dinner is served…
