Sweet Potato, Cauliflower and Chilli Soup

As it has decided to turn to Autumn this week, I made my first soup of the season. You could use, pumpkin or butternut squash as well.

1 large sweet potato, peeled and cubed
1 handful cauliflower florets
1 pint vegetable stock
1 tiny dried chilli, finely chopped
1tsp curry powder
Salt and pepper

Place the stock in a large pan a bring to the boil.
Add the sweet potato and cauliflower.
Cook until soft.
Add the chilli and curry powder and season with salt and pepper.
Leave to cool.

When cool place in a bowl and use a hand blender to whizz until smooth.
Return to the pan and reheat.
Add more stock if necessary.
Check the seasoning, and serve with a swirl of natural yoghurt.
