‘The Best Banana Cake Ever’!

This recipe was certainly a hit this week with a certain young man called Guy. We had it at least twice and bananas were not eaten so that they went too ripe and had to be turned into banana cake!!

I use half quantites and a small loaf tin and it still serves 6!

Banana Bread


  • 75g soft butter
  • 4 ripe bananas, mashed
  • 200g soft brown sugar
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 1 tsp bicarbonate of soda
  • 1 pinch of salt
  • 170g plain flour

Preheat the oven to 180°C/Gas 4. Grease a 30 x 23-cm/12 x 1-inch bread tin.

Pour the mashed bananas into a big mixing bowl.

Mix in the butter, sugar, egg and vanilla extract.

Add the bicarbonate of soda and salt and mix in the flour last.

Pour into the prepared tin.

Bake for 1 hour, remove and cool.

Serve in slices.
