Summer Fruit French Tart

A delicious summer dessert that can be made with any seasonal fruit.

• 150g plain flour
• 75g unsalted butter, cubed
• 2 tbsp icing sugar
• squeeze lemon juice
• water to blend

• 1 quantity of creme patissiere made with 300ml milk
• fresh seasonal fruit

To make the pastry place the flour in a bowl. Add the icing sugar and add butter.
Using your fingertips rub the butter into the flour until you have breadcrumbs.
Add the lemon juice and about 1 tablespoon of water to make a soft dough.
Chill in the fridge for 30 minutes.

Roll out the pastry and line four individual or one large pastry case.
Blind bake for 15 minutes at gas mark 4/180C.
Uncover and bake for a further 5 minutes.
Remove from oven and leave to cool.

Fill each case with the creme patissiere and top with fresh fruit.
