John’s Chocolate Birthday Cake

This is a delicious rich chocolate cake but very light. Perfect for those with a very sweet tooth!

Ingredients for two 6 inch round cakes
• 125g butter
• 125g self-raising flour
• 150g caster sugar
• 2 heaped tablespoons cocoa
• good pinch of bicarbonate of soda
• 100ml cola drink
• 40ml milk
• 1 egg, beaten
• 1/2 tsp vanilla extract
• 30g butter, softened
• 100g icing sugar
• 2 tbsp cocoa
• 1 tbsp cola drink

Heat oven to gas mark 4/180 C.
Grease and line two 6inch sandwich tins.
Sift the flour, sugar, cocoa and bicarbonate of soda together into a large bowl.
Gently melt the butter and cola together in a pan.
Add to the dry ingredients along with the milk, egg and vanilla.
Mix gently but thoroughly.
Pour into the tins and bake for 25-30 minutes until springy to the touch and a skewer inserted into the cake comes out clean.
Remove from the oven and leave to cool on a wire rack.

To make the topping, beat the butter, icing sugar and cocoa together. Add the coke a little at a time until you get a smooth, thick icing. Spread over both cakes, sandwich together and leave to set.

I like to have a thick icing on the top of the cake so I fill mine with a chocolate cream made from whipped double cream flavoured with cocoa and icing sugar.
