Caramelised Tasty Nuts

Tasty Nuts

These are absolutely delicious and the syrup that comes off them is worth saving for brightening up a rainy-day dessert.

  • 300g sugar
  • 450g mixed nuts (cashews, hazelnuts, pecans, macademia, almonds, walnuts)
  • 1 tbsp sea salt (if not using salted nuts)
  • 1 tsp paprika
  • 1 tsp ground cumin
  • 1 tsp ground cinnamon
  • 300ml water

Preheat the oven to 180C/gas mark 4 and line a large baking tray with parchment.

Put the sugar, nuts, salt and spices in a medium sized pan and add the water. Slowly bring to the boil, stirring until the


sugar has dissolved. Reduce the heat and simmer rapidly for 15 – 20 minutes until the mixture is thick and syrupy.

Strain  the mixture through a sieve into a bowl then tip the nuts onto the baking sheet. Spread them out into a single layer and bake in the oven until toasted (can be anywhere from 10 – 20 minutes).

Remove from the oven and leave to cool and harden before breaking into pieces.

Sprinkle with more spices if required. Store in an airtight container.
