Oreo Cupcakes

Here’s a very yummy recipe for this week. A different way of making cakes but it works well!

Oreo cupcakes

Makes 24

  • 110g butter, very soft
  • 220ml milk
  • 2tsp vanilla extract
  • 335g plain flour
  • 1 tsp baking powder
  • 1/2 tsp salt
  • 375g sugar
  • 3 large egg whites
  • about 45 Oreo cookies (4 British packs)

For the frosting

  • 6 tbsp butter, softened
  • 450g icing sugar
  • 1 tsp vanilla essence
  • Oreo crumbs
  • 2-4 tbsp milk

Baking the Oreo Cupckaes

Preheat the oven to gas mark 4/180C.

Twist apart 24 Oreos. Put the cookie with the cream on it filling side up into a cupcake case. Cut 12 of the remaining halves (no filling) in half and crush the other 12 in a small bowl to form crumbs.

Cream the butter in a bowl and carefully beat in the milk and vanilla extract.

Chop the remaining whole Oreos and toss with a little flour.

Sift the flour, baking powder and salt together and add to butter mixture. Stir well and then beat in all the sugar. Mix well.

Add the egg whites (without whipping) and beat for two minutes.

Fold in the chopped cookies and spoon the mixture into the cases.

Bake in the oven for 18 minutes until a skewer comes out clean then cool in the pan for ten minutes before lifting onto a wire rack.

For the frosting; beat the butter, icing sugar and vanilla essence together in a bowl.

Frosting the cupcakes

Add the milk a teaspoon at a time until you get a smooth and spreadable consistency.

Spread over the top of the cupcakes.

Sprinkle with the crumbs and add a slice of cookie.
