Orange Cheesecake

This is an easy no-bake, make ahead dessert and with very few naughty parts to it!

1 pack sugar free orange jelly crystals
400ml boiling water
1 small tub (about 250g) Quark
1 Muller light Mandarin yoghurt
100g extra light cream cheese
4 tbsp sweetener

10 digestive biscuits
Small knob of butter

Crush the digestives.
Melt the butter and stir into digestives.
Press this mix into a 22cm springform tin and place in the fridge.

Put 400ml of boiling water into a jug and sprinkle in the jelly crystals. Stir until dissolved and set aside.

In a large bowl beat the cream cheese and Quark together.
Add the yoghurt and sweetener and mix well.
When the liquid jelly is at room temperature, slowly add most of it to the cream cheese mixture. Save about 100ml for the top.

Pour the cream cheese mixture over the digestives and chill until firm.
When set pour the rest of the jelly over the top and chill until set.

You can decorate with mandarin segments if you wish.
