Canary Banana and Dark Chocolate Tea Loaf

When I make this I split the mixture between two small (1/2 lb) loaf tins and freeze one otherwise it’s all gone too soon!!

4oz butter, softened
6oz caster sugar
2 eggs
2 ripe bananas, mashed
8oz plain flour
1 tsp baking powder
1 tsp bicarbonate of soda
2 tbsp milk, boiling
2oz dark chocolate chips

Pre-heat oven to gas 4/180C.
Grease and double line 1lb loaf tin.

Cream together the butter and sugar until light in colour.
Add the mashed banana and eggs and beat well.
Sift in the flour and baking powder.
Stir the bicarbonate of soda into the boiling milk and then add to the cake mix.
Fold the flour, baking powder and milk mixture into the banana mixture until thoroughly blended.
Stir in the chocolate chips.

Spoon into the tin and bake in the oven for about 1 hour (35-40 minutes if splitting in two) until risen and a deep brown in colour.

Cool on a wire rack out of the tin.
