White Chocolate and Strawberry Cheesecake

Use a top quality white chocolate for best results. The cheesecake can also be flavoured with a splash of amaretto for an extra special touch.

165g digestive biscuits
60g amaretti biscuits
80g butter, melted
250g mascarpone
1 tbsp amaretti (optional)
300ml whipping cream
300g white chocolate, melted
300g fresh strawberries, sliced

Crush the digestives and amaretti biscuits together in a bowl.
Stir in the melted butter and mix well.
Press the mixture into the bottom of an 8 inch loose bottomed tin lined with cling film.
Press down well and place in the fridge.

Beat the mascarpone until smooth and then beat in the amaretto if using.
In a separate bowl, whip the cream until it forms soft peaks.
Stir a little of the cream into the mascarpone to loosen it.
Fold the mascarpone mixture into the remaining cream.
Gently mix in the melted white chocolate.

Remove the biscuit base from the fridge and spoon over the white chocolate mix.
Return to the fridge for at least one hour or until set.

Just before serving, arrange the sliced fresh strawberries on top, slice and serve.

    Seems a good recipe for people called Mary to respond to! Try it with Raspberries when you next have some in season. Even better, if you ask me!
