Three Chocolate Biscotti

For about 20 biscotti
20g butter, softened
70g brown sugar
1 tsp vanilla extract
1 large egg
70g plain flour
25g self-raising flour
20g cocoa powder
90g chopped hazelnuts
40g plain chocolate, chopped into small chunks
40g white chocolate, chopped into small chunks
20g milk chocolate, chopped into small chunks

Beat the butter with the sugar and vanilla in a small bowl until soft and light.
Add the egg and beat well.
Stir in the dry ingredients, nuts and chocolates.
Cover and put in the fridge for 1 hour.

Preheat the oven to gas mark 4/180C.

Divide the dough into two and shape into log shapes on grease proof paper.
Place on a baking sheet and cook for 20-25 minutes.
Leave to cool on the tray.

Once cool cut into 1cm slices and place on a new piece of grease proof paper on their sides.

Reduce the oven to gas mark 1/150C.
Put the tray in the oven for 30 minutes until dry.
Cool on a wire rack.

Keep in an air-tight jar for up to 2 weeks.
